The preparations with brinjal are many Starting from a simple
*Brinjal curry
*Brinjal kootu (brinjal dal),
*Stuffed brinjal,(Gutti vankaya, popular dish in Andhra pradesh)
* Bagara Baigan,
*Vangi bath ( Brinjal rice)
* Brinjal kara kuzhambu (sambhar)
* Brinjal Bhurtha ............ to name a few.
Normally Brinjals are easily available ones in the market, there production is also good and cost wise also it is reasonable. Easy to wash and cut, not a time consuming vegetable. May be because of these features Brinjal enter the Kitchens of many quite often. It gets along well with all most all the pulses &spices used in Indian Cuisine. Its can be easily grown even in the terrace.
When one is under Ayurvedic medication, they are advised not to consume Brinjals. Otherwise Brinjal can be relished by any one.
Lets check the simple method of preparing BRINJAL BHURTHA
1. Roast Brinjal on hot tawa or griddle
2. Remove skin and mash
3. Slice a small portion of the onion. Chop remaining onion finely.
4. Chop green chillies and garlic
5. Heat fat and fry sliced onions. Add mashed brinjal, turmeric, cumin powder, chilli powder, salt and garlic. Cook for few minutes.
6. Remove from fire, add chopped onions and green chillies and garlic. Mix well.
7. Garnish with coriander leaves and serve with Rice or chappaties.
