1. Select plant ripened tomatoes
2. weigh and wash in cold running water to remove arsenic material and to prevent contamination.
3. peel the tomatoes by blanching
4. place tomatoes, onions, sugar, salt, ginger, chillies in a pan and cook to a thick consistency.
5. Add vinegar and cook for another 5 minutes.
6. fill into sterilised bottles.
7. seal the bottles hermetically.
8. Label and store in a cool dry place.
