It is one of the most valuable and expensive spices in the world due to the labor-intensive process of harvesting and its relatively low yield per flower. Saffron has been used for centuries in various culinary and medicinal applications, and it is prized for its unique flavor, aroma, and vibrant yellow-orange color.

Saffron's flavour profile is a fascinating paradox. On one hand, it has a sweet, floral aroma that can impart a sense of honeyed richness to dishes. On the other, it possesses an inherent bitterness that adds depth and complexity.

 Saffron's aroma is often described by connoisseurs as reminiscent of metallic honey with grassy or hay-like notes, while its taste has also been noted as hay-like and sweet. Saffron also contributes a luminous yellow-orange colouring to foods.

 Saffron has a distinguished and soft scent. The aroma should be floral, honey-like, with a slight sweetness to it.

 The colour, flavour and aroma of saffron are mainly due to crocin, picrocrocin and safranal, respectively. Due to very high crocin content and rich aroma, the Kashmir saffron is famous worldwide and commands a premium price over the saffron available from Spain or Iran.

 The aroma of high quality saffron is often described as smelling sweet, floral, and spicy. Sometimes, it is also described as having a hay-like aroma and a metallic note. Saffron has long been used as a dye, as a medicine, and also as a cosmetics/perfumery ingredient.

 Saffron scent is distinctive but can be difficult to describe.   It is a dark, leathery, spicy note, with tarred effects and a hint of honey.

Sweet hay and honey evoke the prevailing characteristics of saffron, but this spice also has slightly bitter and unguent properties. Perfumers consider the aroma of saffron to have an earthy or leathery profile.

 Thus A mysterious, spicy, sensual and elusive scent, saffron is known to add depth and character to any perfume. A fragrant fixative, it is often combined with lush vanilla and warm, honeyed amber to become an exotic, luxurious signature fragrance.
