A signature item is a particular food or drink that a restaurant has created and is very well known for. Every establishment needs a signature item which becomes the mainstay for regular patrons, and, in turn, keeps the establishment in business for a very long time. Rather, it's the dish that best embodies the cooking style of a chef or restaurant.
In the same manner one of our family friend (Tara aunty) prepares a sweet dish - "Dhaithra" whenever she visits us or we visit her. From our younger age we all love to eat this and relish it very much. It is tasty, & yummy to eat. Though the ingredients make it but surely her love and care with which she prepares it makes it more delicious.
Dahitra is kind of fried biscuits, flaky, mouth melting, a traditional semi-sweet dessert recipe prepared mainly with maida or all purpose flour, deep fried in ghee / oil and served with flavored yogurt known as Shrikhand.
Traditionally, the recipe begins with preparing a light dough from all purpose flour with ghee, Dahi and baking powder. Then the dough is shaped into a small flat balls followed by deep frying in clarified butter . It can be had at any time of the day.
