Christmas is almost nearing and the festivities are already started. Here is a recipe of CHRISTMAS TREE CAKE which you can prepare on the Christmas day for your family &friends.
1. Sieve flour and baking powder
2. Crush sugar if necessary
3. cream butter and sugar very well until light and fluffy
4. Beat eggs and add flavour and add to mixture gradually beating all the time
5. Fold in sieved flour very lightly with a little milk to make a dropping consistency
6. Pour into 2 swiss roll tins and bake at 190 degree or 375 degree F for 25 minutes
7. Remove and cool it
Make filling and topping by creaming 1-3 oz packet of "Philadelphia" cream cheese, then gradually work in 14 oz sieved icing sugar and 3-4 top lemon juice
Cut each cake into Christmas tree shape, using a template cut from a piece of paper as a guide. Sandwich the two shapes together with a little of the icing. Colour 3 tblsp of the remaining icing with a few drops of food colouring. Spread the remaining of the white icing sugar over the top of the cake and mark with a fork.
Pipe a shell border using a no;7 star tube around the edge of the "tree" with green icing. Insert a candle at the end of each "Branch" and surround the base with sliver balls. Pipe X-mas with a no:1 writing tube and with green icing decorate the center of the cake.
If you like the Victoria method, sponge mixture may be flavoured with a little grated orange rind. The trimmings from the two cakes can be used as a knife, or for making chocolate truffles.
