1. Heat butter. Add brown rice and fry till golden brown
2. Add stock. Bring to boil.
3. Chop celery, capsicum and onion
4. Blanch tomatoes and smash thoroughly
5. Slice ladies finger (okra) into roundels. Heat butter. Fry celery, capsicum and onion. Add tomatoes and bring to boil.
6. Pour into rice and add salt and pepper. Simmer covered till rice is tender.
7. Add ladies finger and simmer for 15 minutes more.
8. serve hot sprinkled with parsley
