Let's get to know about Avocado and the famous styles of preparing it:
Avocado is a pear shaped fleshy fruit of a tree native to tropical Africa but now grown in the U.S.A, Mexico, Central and South America and West Indies. It varies in weight according to the different varieties .The tough skin is green to brown or purple, the flesh bright green to yellow and of an agreeable taste.
Five styles are:
Jaipure : peeled, cut in halves, seed removed, cooked in white wine, sugar and lemon juice; when cold placed on base of vanilla rice, opening filled with Guava jelly, crushed macaroons scattered on top.
Louison : ripe fruit peeled, split lengthwise, seeds removed, the two halves scooped out lightly and interior macerated with Anisette; placed on base of genoise soaked with Anisette syrup, opening filled with pralin ice, coated with Chantilly cream and sprinkled with ground pralin; served chilled with strawberry puree separate.
San Francisco : peeled, sliced, seed removed, macerated in sugar and brandy; cold vanilla rice arranged in baking dish, covered with vanilla ice, the avocado slices placed on top, coated with meringue - mixture, decorated with meringue, dusted with sugar and browned rapidly.
Stewed : peeled, cut in quarters, seed removed, cooked in syrup flavoured with ginger, served chilled.
Avocado cocktail : dice Avocados and serve chilled, covered with cocktail sauce made of tomato catsup. Worcestershire sauce, lemon juice and thick cream, seasoned with paprika.
