 1. Wash and soak rice

2. Blanch the tomatoes, grate coconut, add hot water. when cold, extract milk.

3. Grind together onions, green chillies, turmeric and coriander leaves.

4. Rub tomatoes through sieve. Mix with coconut milk, add salt.

5. Drain rice. Smear sultanas and remove . Fry cardamoms, cloves and bay leaf. Add rice and fry.

6. Add tomatoes and coconut milk to rice with sufficient hot water to make approximately half the quantity of the rice

7. cover and cook till rice is tender

8. Drain off surplus moisture by putting live coal on the lid of pan or by putting the pan on the oven.

9. Serve hot, garnished with sultanas and nuts.
