7 POINTS ON PRESERVATION OF PINEAPPLE JUICE

 



1. select uniformly ripened pineapples

2. wash in cold running water till the surface soil and arsenic material is removed to prevent contamination.

3. The fruits are cut into halves with stainless steel knife and the juice is extracted by using juice extractor.

4. The collected juice is filtered through muslin cloth to have uniform juice.

5. The juice is measured using measuring jars and calculated amount of  pottasium meta bi sulphate is dissolved in little juice and added as a preservative.

6. The juice is immediately filled into clean sterilised bottles and the corks are tightened.

7. The bottles are duly labelled and stored in a cool , dry place.
