TIPS TO PREPARE ROYAL ICING




·       Sieve icing sugar twice to make quite sure that it is free from lump
·       Beat the egg whites slightly. Add lime juice and sugar gradually beating all the time.
·       Beat until the icing is of stiff consistency, it should stand up in peaks.
·       Cover it with a cloth and use it as and when required

·       Use a palate knife dipped in warm water to smoothen it. Let the base dry well before decorating the cake.
