QUICK STEPS TO PREPARE TOMATO RASAM - A MUST IN THE SOUTH INDIAN MENU

 


 

Tomatoes are available throughout the year and because of this, it is possible to cook at any time easily. They go well in dal, pickles, juice, curry, soup etc. In south India a popular and a favourite dish of many is RASAM- prepared with tomato juice and served before curd and after sambhar in the order of the menu.

INGREDIENTS

Tomatoes

Salt

Curry leaves

Coriander leaves

Rasam powder

Asafoetida

Turmeric powder

Mustard seeds

Oil

For Rasam powder:

Coriander seeds

Toor dal

Channa dal

Pepper

Jeera

Red chillies

Sun dry the above ingredients and grind them into dry powder. Take coriander seeds 3 cups and 1 cup of each other ingredient (3:1) to make Rasam powder

PREPARATION:

Select fully ripened tomatoes, wash well, and extract juice

Pour the juice into a vessel and let it boil for sometime

Then add turmeric powder, salt, rasam powder, and asafoetida.

Let it simmer and add water at frequent intervals to bring it to a soupy consistency

Add curry leaves and coriander leaves finely chopped

Pour oil into a kadai, add oil and mustard seeds, and when they crackle, pour it over the prepared rasam

Serve hot along with rice and curry or papad.


 


Any vegetable curry is suitable for Rasam, but this PERFECT POTATO PODIMAS, as the name suggests, is a perfect accompaniment.

Potatoes are the vegetables that are loved by all world over. It's an easy vegetable in every way and goes well with almost all the other vegetables. There are countless dishes prepared using potatoes ranging from chips to curry to stew to parathas. Here is a quick recipe to prepare perfect potato podimas.

INGREDIENTS:

Potatoes

Oil

Mustard seeds

Urad dal

Channa dal

Green chillies

Salt

Lemon

Coriander leaves

Turmeric powder

Ginger

PREPARATION:

Select and wash well the potatoes and cut them into half, cook in a pressure cooker

Drain the excess water using a colander. Allow it to cool.

Peel the skin of the potatoes and keep it aside.

Take a kadai. Pour oil, add mustard seeds when they crackle, add chopped green chillies, urad dal and channa dal. Fry till golden brown.

Add the potatoes, turmeric powder, grated ginger and salt.

Mix well or mash it slightly and allow it to fry for some time.

Remove from fire. Add lemon juice & finely chopped coriander leaves.

Mix well and serve hot with roti or rice.


This perfect potato podimas will be a tasty treat if taken along with Rasam.
