Tamarind is widely used in South
Indian cuisines for sambhars. It gives a sour taste and is rich in vitamin C.
Its leaves are also used to prepare chutneys, dals and pickles. Here is a
recipe using tender tamarind leaves :
INGREDIENTS :
Tender tamarind leaves
brinjal
raw mango
toor dal
green chillies
Asafoetida
fenugreek
salt
oil
Red chilli powder
Mustard seeds
Turmeric powder
PREPARATION:
1. Select tender tamarind leaves
and chop
2. Take
brinjals and raw mango and cut into pieces.
3. Take toor
dal, fenugreek seeds and green chillies in a bowl and add all prepared
vegetables and leaves.
4. Cook it
in a pressure cooker.
5. Take a
kadai, pour oil and add mustard seeds when it crackles add red chilli powder
and fry it till golden brown.
6. Now add
the cooked vegetables and dal in the kadai
7. Add
turmeric powder, salt and asafoetida powder.
8. Mix well
and allow it to simmer for a while
9. Its ready
to serve along with white rice and ghee.
