5 STYLES OF COOKING CHICK PEA

  



 Chickpea is a native of western Asia now cultivated in all countries bordering the Mediterranean, in Turkey and India. It is larger than the common pea and especially popular in Spain. Chick peas must be soaked in cold water for several hours and are then cooked in lightly salted water.

with Butter : cooked, drained, bound with butter, chopped herbs scattered on top.

Catalonian style : Cooked, drained, mixed with tomatoes concassee, crushed garlic and chopped fine herbs.

Creamed : boiled, drained, cooked up with cream and butter

Puree of : Cooked, drained, rubbed through  a sieve, finished off with cream and butter.

Vinaigrette : Cooked, drained, served cold in Vinaigrette sauce.
