1. Heat milk and butter together and pour over the bread.
2. Add sugar, egg yolks and grated lime rind. Mix well and allow to stand for an hour.
3. Pour into greased pie dishes and bake till quite firm.
4. Heat jam and spread over the pudding.
5. Beat whites of egg stiffly. Fold in sugar and pile on pudding.
6. Bake in a slow oven for about 15 minutes till meringue is set pale brown in colour.
