LIST OF CLASS I AND CLASS II PRESERVATIVES





 Preservative is a substance which when added to food, is capable of inhibiting, retarding or arresting the process of fermentation, acidification or other decomposition of food.

It shall be divided into following classes :

CLASS I preservatives are :

(a) common salt

(b) sugar

(c) dextrose

(d)Glucose

(e)wood smoke

(f) spices

(g) vinegar or acetic acid

(h)honey

CLASS II preservatives are :

(a) Benzoic acid

(b) sulfuric acid

(c)Nitrates or Nitrites of sodium or potassium in respect of food like Jam, pickled meat

(d)  Sorbic acid

(e)Niacin

(d) sodium and calcium propionate
