4 POINTS ON EGGPLANT SALAD


 1. Baked, skinned, washed, chopped fine with a wooden knife

2. Seasoned with salt and pepper, mixed with lemon juice and grated onions

3. Blended with oil and prepared like mayonnaise

4. Served very cold as an appetizer garnished with tomatoes cut in quarters.
