FIVE POINTS ON MOUSSE AU CITRON



1.   Put grated rind, lime juice, egg yolks and sugar into a basin.
2.   Whisk over hot water till thick and frothy
3.   Remove from heat and whisk till cold
4.   Add gelatine dissolved in water. Continue whisking
5.   Fold in stiffly beaten egg white and mould when on point of setting
