FIVE POINTS ON LEMON SPONGE








1.  Put the rind and juice of lime, sugar, gelatine and water into a sauce pan. Cover and bring to boil.
2.    Infuse for half an hour
3.    Strain and cool .Whisk the egg whites stiffly in a large bowl. Add the cool mixture slowly, whisking well.
4.    Whisk till it starts to set.
5.    Pour into a wet mould and turn out when set, serve with custard sauce.
