EIGHT POINTS ON BAKED COCONUT PUDDING




1.    Heat the milk and margarine together
2.    Pour over the bread crumbs
3.    Add coconut, lemon rind and granulated sugar
4.    Beat the yolks of eggs and add to mixture
5.    Allow to stand for half an hour.
6.    Put into a greased pie dish and bake till quite firm
7.    Whisk the whites of eggs firmly. Fold in castor sugar and pile on top of the pudding.
8.    Put into a cool oven, until the meringue mixture is crisp and  pale brown in colour.
